You can always give the enhanced edition mod a try. I found that the combat was boring and repetitive until using it. It makes combat much more strategic. You need to understand enemies beyond just silver vs steel. Managing stamina so no rolling around like a madman. Potions and oils become essential, but also require you to use a modified crafting system to make them all individually.
