I can see the artistic appeal of them, but personally I tend to look at practicality first and most of them were absolutely idiotic in that regard.

Doesn’t she usually have her body double wear these clothes, and she herself wear the more practical attendant(?) outfit?
It’s about 50/50. She spends most of the movie dressed as a handmaiden, but that’s largely because the Tatooine sequence lasts so long.

Easier to hide body armor under it.
