Yes, many times. Good for roasting especially.

Iโ€™ve had a farm share for a number of years, and have eaten a number of different types of potatoes, including two different blue ones.

Weโ€™ve been trying to grow them in order to eat them!

Yes many times. They re common over here, maybe not in supermarkets, bit can be found easily

Fantastic mashed with a bit of maple syrup. The end result looks like it was artificially colored.

I grow them! Stokes Purple. They are the best because they are not as gluey as other types of sweet potato. They even grow in our hot summer weather.

ETA: itโ€™s resource intensive but my favorite way to prepare them is freeze then bake, and I like them with olive oil, goat cheese, pepitas and salt & pepper.

That is amazing!

They have a kind of cool story too, were developed as a replacement crop for tobacco farmers in North Carolina. So easy to propagate. Just let one sprout then put it in a big container of dirt (easier to find them if you grow in a container) and if you get too many donโ€™t sell them, I think they are still under patent.

Yep. Tasted like a potato.

Never seen them, but Iโ€™d try one of if I did.

The closest we have are mini potatoes that come in a tricolor bag including white, red, and blue. But the interior is mostly white

Yeah, I have eaten Blue Congo potatoes, and they are kinda funny, they react with different foodstuffs, I seem to recall acids making the normally purple potato bright red where the acid touches it.

Iโ€™ve never even seen one in person. But maybe, if thats what the purple things in those veggie straw snacks are. Iโ€™ve had those. I didnโ€™t like โ€˜em, but I had them before.

Edit: Wait a minute, no. This past Thanksgiving my sister made mashed potatoes from purple potatos. How the hell forget that? ๐Ÿ˜ตโ€๐Ÿ’ซ IDK where she got โ€˜em. Maybe Sprouts? We have one here but I never go there.

I was expecting them to be closer to a sweet potato but they tasted no different than regular potato.

these are so good when roasted
