Why? If you can make a planet out of gold you can make it however big you want.
Well I guess if you start with the gold first and don’t ever change the amount. It would have to be much smaller though because gold is so dense.

Gold isn’t that rare if you have cheap space travel. Although planet sized is a decent chunk.
The impracticality of transporting planet sized volumes of gold across the galaxy seems like a big problem for its usefulness as money
