Achilles was held by his heel when his mom dipped him in the river Styx as an infant, so that was the only place not touched by the water and the only place left vulnerable. If a being didn’t have heels, ankles, feet, or whatever, presumably it would have to be held by some other part, leaving that part vulnerable. Or they could, you know, shift their hold a moment to get the water everywhere.
